On the eastern side of Mallorca, this estate was mentioned in documents as far back as the 12th century, and today roughly 8,000 trees are cultivated. The olives are harvested early to capture the ultimate fruitiness of the Arbequinas, and the end flavor is redolent of crisp green olives. It also has a wonderful buttery quality which chefs love. It takes over 17 pounds of fruit to make 1 liter of this oil. We’re sure that with one taste you’ll see it is totally worth it. With an acidity of less than 0.1%, the Aubocassa is perfect as a finishing oil, especially on fish. 6/500ml
