DiSola Bruna is a cheese produced in Montechiarugolo in one of the most important areas in the province of Parma specializing in milk production for the production of Parmigiano Reggiano. It is produced from 100% Swiss Brown cow.
Although there are currently 4 producers of this specific type of cheese, we choose to work with Antonio Sangonelli who has been making cheese for over 20 years and who always has believed in the quality of this particular breed of cow due to its unique equilibrium of quality and ability to produce milk.
Antonio has 100 cows of which 55 are being milked currently. He was one of the founders of the Consorzio DiSola Bruna in 2005 and has been working to promote the breed and the cheese ever since. 1/80#
