This vegetarian relative of Grana Padano is one of the few aged cheeses made with thistle rennet. Milk is collected from Fiandino’s herd of 250 Bruna Alpina cows and local dairies to produce this one year aged raw milk cheese. The crumbly, buttery texture has floral aromas and a bit of tang from the vegetable rennet. Perfect to grate over pasta or to shave over vegetables. 1/80#
