Milk is collected from freely grazing dairy cows north of Novara in the hills to create a blue so creamy that it’s best served with a spoon; the French refer to the style as “a la cuiller.” Brothers Maurizio and Fabio Leonardi personally select the best wheels to become Gran Riserva.
