Lou BlauThis cow’s milk blue cheese from Fiandino, the cheesemaker behind Lou Bergier and Frumage L’Ottavio, was inspired by the ancient tradition of transhumance, the seasonal movement of livestock between pastures. Slate-blue molding runs throughout the stout, cylindrical wheel wrapped in foil. Made with the milk of the freely roaming Bruna Alpina cow and using thistle flower as a coagulant, it is aged for about 30 days. This special blue is rich, velvety and well balanced. Full-bodied, earthy, mushroomy flavors are tempered by notes of sweet cream.  2/2.5#
