Madurat is an unpressed slow whey drained lactic fermentation pasteurized goat cheese covered with vegetable ash, which allows penicillium candidum to grow. Aged for about 30 days, the cheese is dense, chewy and sweet with bright citrus zest notes. 4/1kg
