20160626-IMG_8704The producer of this 1 year raw milk Manchego makes cheese in a small town called Daimiel located near Las Tablas national park. The cheese is buttery with a beautiful natural rind. He has won a slew of awards (15 and counting) since 2001 for his expertly aged cheeses, and we’re happy he’s behind our Mitica® 1 year. 2/6#
