This one is made by wrapping cheese in leaves from walnut trees planted by the Archbishop of Veneto. After aging the cheese about 60 days, he puts it in sealed oak barrels with the leaves for another 60 days where it takes on the aroma of the leaves. The full nutty flavor makes for an approachable but elegant cheese.  2/5#
