Pecorino Sardo DOP Maturo is produced by a dairy on the western side of an island with more sheep than people. The production methods balance generations of skill, modern technology, and by-hand methods. Shepherds traditionally made the cheese high in the mountains in huts known as pinnettas. The cheese has a dense texture you can really sink your teeth into, with a slight granular quality. The taste is smooth, sweet, and savory. You can taste the lush, meaty sheep’s milk, balanced by a lovely herbaceous note and delicate piquancy. The cheese pairs well with chestnut honey and rustic Southern Italian reds. 2/7#
