Brothers Bruno and Alfio created a sustainable farm, Quattro Portoni, in their hometown and overhauled their business to raise buffalo instead of cattle. They have won multiple awards for their cheeses, all made with 100% buffalo’s milk. This is their first camembert-style cheese. Bruno puts his cheesemaking and affinage skills to good use, developing the cheese’s bloomy rind, which has aromas of mushroom. The richness of the milk is particularly well suited to this style of cheese, and Penny Bu is creamy and fruity with the right amount of salt. 5/300g
