We are the sole importer of this raw goat’s milk artisan cheese from Asturias, Spain. It was named after the cheesemaker, Anita, who lives in a small town with more goats than people. Her farm is virtually organic, with all of the feed for her goats grown right on the farm. Queso Aní is creamy with a nice sweet and salty balance. The texture is flaky and it fills the entire mouth with lots of complexity in the finish. The wheel has a wonderfully speckled natural mold rind. 8/1# (preorder)
