Roccia hi rez The name Roccia  (“rock”) comes from the way this 8-month cheese is aged. Farmers used to hide their cheese from plunderers in rock cavities formed by the flooding of the Piave river. This environment forms its particular appearance and flavor: a wonderfully crumbly texture and a clean, yet intense, flavor.
