RONCAL

The first Spanish cheese to obtain the DOP status, Roncal is produced from raw milk at the foot of the Pyrenees in Navarra. Our cheesemaker Mikel is one of only a handful of producers. Though often compared to Manchego, Roncal is more complex and piquant, with notes of lanolin and butterscotch. Aged 6 months. 2/6#
