This washed rind goat’s milk cheese is made in the mountains of Catalunya, north ofBarcelona, by a small artisan producer. With a slightly orange rind, Sant Mateu is aged 1 to 2 months. It has a wonderful aroma of flowers and hay. The flavor itself is full and complex. Creamy with a soft acidity, it has a wonderful sweet finish and becomes more intense with age. 4/2# (preorder)
