This smooth, full-flavored blue cheese is made with sheep's milk in the heart of Tuscany. The aroma is complex with notes of butter and barnyard. These aromas open up into a smooth flavor that balances fruit, mushroom, and minerality, with minimal piquancy. The slightly creamy paste belies the assumption that all sheep’s milk cheeses need be as piquant as Roquefort.
