Cebreiro Santo André DOP
We love the unique shape and flavor of this lesser-known, limited production cow’s milk cheese from Galicia. Wanting to tap into his region’s traditions, cheesemaker Carlos Reija transformed a stable on the family dairy farm into a cheesemaking facility. He makes both a fresh cheese, which is sent out the day after it's made, and a 90 day aged version. Characterized by its mushroom shape, the cheese has a creamy, somewhat granular texture that melts in the mouth. The flavor is milky with a slight acidic tang, which becomes more pronounced as it ages. A standout!
