Liteggio di Bufala
A raw milk cheese from the brothers at Quattro Portoni, makers of 100% buffalo milk cheeses at their sustainable farm in Cologno al Serio outside of Bergamo, Italy. Liteggio is a natural rind cheese aged 90 days with a soft, crumbly, pearly white paste. It has the unmistakable rich, sweet flavors characteristic of buffalo milk, with a slightly earthy, tangy finish. Serve with raw Italian Sunflower Honey, or alongside slices of Casella’s Cacciatorini. Pair with a drier rose, such as a Chiaretto. Preorder only.
