Pecorino Romano DOP Montagna Mitica®
This Pecorino Romano has the special designation of "Prodotto di Montagna," meaning it comes from the mountains of Sardegna, with milk exclusively from mountain-based farms. It is a full-flavored, grating cheese with pronounced saltiness but less salty than the average Pecorino Romano. The co-op we work with produces exceptionally large wheels weighing between 28-32 kg (rare in Sardegna) and ages a minimum of 5-6 months. The cheese is dry salted, not brined, for even penetration, which leads to consistency and better flavor. While most importers look first at price, we purchase based on quality and consistency of the cheese. Though our producer always demands higher prices in the Italian market, we feel that it is worth it for the best possible product.
