Deep within the Picos de Europa national park, Javier Campo’s 25 cows graze in the high mountain pastures for most of the year. Their raw milk is the basis of this spectacular farmstead blue cheese, which is aged in natural caves, developing natural bluing. It is strong and piquant with lots of personality.
