An intensely flavorful aged cheese made in the Bavarian Alps and aged in the Val d'Astico Valley of Italy. The cows graze on grass that grows in the mountain pastures (1100m), giving the cheese its vibrant golden color and its distinct terroir. The flavor density is high and reminiscent of an aged gouda, with strong notes of caramel and butterscotch. Its sweetness is complemented by hints of toasted nuts and ripe fruit. The paste is creamy on the palate. This is a truly special cheese that is suitable for merchandising out of refrigeration.
