A soft-ripened, bloomy rind cheese with a distinct similarity to Stracchino, Casatica® highlights the characteristics of buffalo milk. Bruno and Alfio of Quattro Portoni chose the shape and size so the cheese would have a better shelf life. The name comes from one of the four entrances to their town, Cologno al Serio. The cheese oozes when you cut into it and is milky and creamy with a sweet finish ― it’s just heaven! 3/2#
