Lady Edison Extra Fancy Country Ham brings the funk in the best way possible - it's a robust, succulent artisan ham that is long-aged in the Blue Ridge Mountains of North Carolina. The heritage breed pigs are pasture-raised and come from a small co-op of farms that are Animal Welfare Approved and certified non-GMO. While aging for 18-24 months, the ham cycles through several aging rooms that mimic the natural seasons, including the Summer Room that is warm and humid, where the ham starts to develop its distinctive umami funk. After one year, the hams are aged in an unconditioned room where temperature and humidity fluctuations are common and give even more character to this exceptional ham. This length of ambient aging in a less controlled environment is unique to Lady Edison's Extra Fancy Country Ham and is one of the main factors that contributes to its rich flavors, aromas, textures, and color.
