The newest buffalo milk cheese from Quattro Portoni is rustic, semi-soft, and tender. It is aromatic with a pearly white paste that is lactic and earthy with notes of hay. Back in 2006, the Gritti family decided to make cheese on their farm in Lombardia, Italy and have become pioneers in aged buffalo milk cheeses, creating a market for this style. On their family-run farm, they grow most of the feed needed for the buffalo and convert their waste to biogas.
