Julian is the cheesemaker behind this exceptional washed-curd cow’s milk cheese from Aragón. He was one of the first Spanish cheesemakers to incorporate washed curd techniques, a practice more common to Dutch and Swiss varieties. His cheese plant in Zaragoza also includes a classroom, where he shares his knowledge and passion for cheesemaking and animal husbandry. His exceptional Aragonés is one of the most interesting cow’s milk cheeses we have found from Spain. It is earthy and slightly fruity with a clean finish due to its washed curd, which lowers the acidity. Preorder only.
