Glarner Alpkäse AOP 2023 – Alp Heuboden

The Tschudi family and their herd move between four different huts throughout the summer, and once they reach the highest one they are so far away from the valley that a helicopter drops off all their provisions and in return takes the freshly crafted wheels down to the communal cheese cellar of the AOP. Fritz Tschudi’s cheese is an ode to elegance: aromas and flavors of sweet cream, slight smoke, florality and fresh herbs come through in perfect balance. A subtle, humble and mighty fine cheese!
