Lady Edison Jinhua Style Ham
Considered a delicacy, Jinhua ham is a coveted yet elusive ingredient for chefs worldwide. Dating back to the Tang Dynasty, it is a specialty of the eastern coastal province of Zhejiang, where it has been cured for over 1000 years. Due to trade restrictions, the ham is banned from many countries outside of China, including the U.S. The climate and terroir of the American ham belt mirrors that of Jinhua, and chefs Sam Suchoff and David Yourd adapted their North Carolina country ham to become the perfect substitute for Jinhua. It is a beloved versatile ingredient due to its intense umami flavor. Use to flavor broth, as the base of XO sauce, add to stir fry, or enjoy on its own.
The ham is made in North Carolina from heritage breed pigs that are pasture-raised and come from a small co-op of farms that are Animal Welfare Approved and certified non-GMO. It is cut, bone-in and skin-on, into three segments, similar to how the ham is packaged in China.
