Margot
Margot is a Biellese cow's milk cheese made with blonde ale. Maria from Caseificio Pier Luigi Rosso takes her recipe for a traditional semisoft cheese called Maccagno and adds Margot beer from a local craft brewery. She then ages it a minimum of 30 days and finishes it in more beer. The result is a full flavored, beer forward cheese with a delicate balance of sweetness and bitterness.
