MitiBleu is a rare sheep’s milk blue from Spain. Wishing to create a Spanish sheep blue to rival Roquefort, an entrepreneur in the cheese industry in 2003 built a plant near the medieval city of Toledo. Milk is taken from the plentiful sheeps grazing on the plains of La Mancha (Manchego country) and aged 4 months to create a blue that is bold and flavorful but packs less bite than its French counterpart. 4/3#
