Inspired by their sheep’s milk cheese made from one herd, Oveja Añejo, Los Cameros decided to try a similar venture with cow’s milk. The famed cheesemakers from La Rioja purchase all the milk for this cheese from one local herd of Friesian cows, chosen for its high quality. The cheese ages for one year in their underground caves and is rubbed with olive oil during aging. Stunning and unique, it is firm, full flavored, and balanced with notes of toasted hazelnuts and undertones of brown butter.
