Alpkäse 2023 – Schwägalp

The dairy is situated on the foot of the massive Säntis mountain in the northeastern corner of Switzerland. The team supporting longtime cheesemaker Albin Grätzer crafts wheels that have an excellent maturation potential. When young, the cheese tastes lovely, clean, and floral and has an almost buttery texture. Over time, it develops more pronounced, herbaceous flavors that can become piquant with age.
