CARM Extra Virgin Olive Oil
CARM is a pioneer of olive cultivation in the Douro Superior, a region of Portugal characterized by dry, steep hills well suited for olive groves and vineyards, extreme temperatures, and little rainfall. These natural characteristics make it one of the best areas in Portugal for olive oil production. CARM does not irrigate its groves, preferring to keep its production small and of the highest quality.
Filipe Madeira makes this classic Extra Virgin Olive Oil from Portuguese olive varietals, including Cobrançosa, Madural, Negrinha and Verdeal, grown on his own groves and on small local farms. The olives are harvested from the beginning of October until the end of November, and the oil is cold extracted immediately after picking, resulting in a fruity and fresh oil with fruity, peppery, and bitter flavors all well balanced. It is bottled after a natural decanting, without filtering. The acidity level is between 0.1% and 0.3%.
