Oloroso Sherry Vinegar El Majuelo
Oloroso vinegar is made from Oloroso sherry, a dry, full bodied sherry made with 100% Palomino grapes that is typically dark and nutty. Using five year aged Oloroso sherry, acetic fermentation converts alcohol to vinegar as it ages slowly over two years in American Oak barrels. Amber in color, with a smooth, light-bodied consistency, it is lightly acidic with just a touch of sweetness. Notes of walnut, hazelnut, and exotic spices bring it to life. It is a rare varietal of vinegar that is worth tasting.
El Majuelo is a family-run company in Jerez, Spain. Joaquin’s family has been making sherry vinegar in Jerez for 4 generations. A trained winemaker and cellarmaster, Joaquin took over the business from his father. He uses traditional criaderas and soleras process of transferring vinegars from barrel to barrel over a period of many years, giving the vinegars their unique character. El Majuelo is known as one of the top artisan sherry producers in the region.
