Casa Agricola Roboredo Madeira (CARM) is a family business headed by Filipe Madeira, who takes his olive oil seriously. His dedication shows in the Grande Escolha (meaning the Great Selection), one of the most exceptional olive oils we have tasted to date. The organic olives – mainly Madural and Verdeal - are handpicked between the end of October and early December. They are processed without delay and pulverized in a traditional granite stone mill without the addition of water, which would diminish their aromatic quality. The oil is bottled after a natural decanting, without filtering, so some sediment will appear at the bottom. The careful process results in a complex oil that is rich and fruity, yet peppery in the finish. The award-winning CARM is a must-have for anyone who considers themselves an oil connoisseur.
