This limited edition, 1 year aged sheep’s milk cheese is made in the heart of Spanish wine country with milk from one specially chosen herd. Its mottled grey natural rind encases a firm, slightly crumbly golden paste with small eyes throughout. The paste has a full, intense, almost smoky flavor with deeply savory aromas. It is a great alternative to Manchego from a cheesemaking region that is underrepresented in the U.S.
