Moringhello di Bufala
A small, circular semi-soft cheese with deep grooves, Moringhello obtains its unusual flavors by being placed in a hot part of the aging room for an entire evening. This causes the pH to drop and the acidity to rise, resulting in its slightly chalky texture and tangy flavor. Earthier towards the rind, the paste is bright, grassy and acidic. Preorder only.
