Queso Castellano IGP Añejo
This one-year aged Queso Castellano Añejo is an 100% sheep’s milk cheese from Castilla y León, a region uniquely positioned for raising sheep, due to its continental Mediterranean climate and wide variety of native aromatic plants. Though it has been made for centuries, Queso Castellano received an IGP (protected geographical indication) from the EU in 2020, which protects its production. We source the cheese from a third-generation company, which sisters Luisa (cheesemaker) and Laura (marketing/sales) now run after taking over from their father. They purchase milk from local farms and use traditional cheesemaking and aging techniques to create this quintessential, high-quality Spanish cheese. The cheese is flaky and intense, with a robust aroma of butterscotch. As you eat the cheese, the flavors slowly evolve, starting with butter and caramel up front, moderate acidity throughout, and a long, nutty finish.
