Raised outdoors for over 18 months, three times longer than commercial pigs, our pigs develop deeply marbled, flavorful pork that’s unmatched in quality. They offer a full line of dry cured meats and fresh cuts, crafted with care to highlight the exceptional character of our heritage breed and Texas landscape.
Reminiscent of prosciutto but with Texan flair. Its flavor is rich, subtly sweet, and nutty, with a delicate, melt-in-your-mouth texture. The aroma is earthy with hints of oak, thanks to 100% Texas Iberico pork.
