Raised outdoors for over 18 months, three times longer than commercial pigs, our pigs develop deeply marbled, flavorful pork that’s unmatched in quality. They offer a full line of dry cured meats and fresh cuts, crafted with care to highlight the exceptional character of our heritage breed and Texas landscape.
The Mesa Salami is inspired by the belief that the best memories are made around the table or "mesa." The rich, savory flavors of 100% Iberico pork are infused with the vibrant notes of Mexican oregano, creating a unique salchichón-style salami perfect for any occassion.
