As you may know, Forever Cheese is celebrating its 20th anniversary this year. Throughout our time in business, there have been some standout products that have really shaped the company and our success. These cheeses and accompaniments are our backbone and epitomize what we do and what we’re about. Additionally, we have developed important relationships with the producers that craft these products, and are very proud of our close partnership with each one. Many of these products have spurred food trends in the specialty world and have become mainstays in the cheese case. We are happy to present these items that have shaped our history:
Genuine Fulvi® Pecorino Romano The first cheese Forever Cheese ever imported, this classic Pecorino Romano is one of the last still made in the countryside of Rome.
Cacio de Roma® A creamy, semisoft Italian sheep’s milk table cheese that melts beautifully.

Quadrello® di Bufala A creamy, rich buffalo milk Taleggio made by Quattro Portoni in Lombardia, Italy.
Sottocenere® al Tartufo With its name meaning “under ash,” this cow’s milk cheese with black truffle has an ashed rind with spices like nutmeg, cloves, cinnamon, and fennel.
Taleggio Ca de Ambros® A classic Italian washed rind cheese, this pudgy, pink square is brought to peak ripeness by cheesemaker and affineur Ambrogio Arnoldi.
Ubriaco® Cheeses Cheesemaker Sergio Moro bathes these aged cow’s milk wheels in everything from grape must to Prosecco to artisan beer, imparting incredible flavor to the cheese.
Campo de Montalban® Aged 100 days, this cheese from Castilla La Mancha is made with a blend of cow, sheep, and goat’s milk.
Caña de Cabra/Caña de Oveja Caña de Cabra is a log made with luscious Murciana goat’s milk, while Caña de Oveja is a sheep’s milk log; the first of its kind in Spain.
ChocoHigos® A collaboration between two of our producers, ChocoHigos® are dark chocolate dipped Pajarero figs, a soft and juicy variety from Spain.
Drunken Goat® A semisoft goat cheese from Murcia soaked in wine; we were the first importers to bring this DOP cheese to the U.S.
Mitica® Fig Cake Made by hand with Pajarero figs and Marcona almonds, we expanded our line to include cakes made with dates as well as walnuts, chocolate, mixed nuts, and coconut.
Garrotxa A new classic natural rind goat cheese from Catalunya, Spain, made by Josep at Sant Gil d’Albio.
Leonora® A dense, fudgy goat cheese with an incredible creamline, this cheese is the creation of Oscar in the countryside of León, Spain.
Mahon A pleasant, mild cow’s milk cheese with a characteristic orange rind from the island of Minorca, Spain.
Manchego El Trigal® 6 Month One of our first partnerships in Spain, this Manchego from Corcuera is brightly flavored with nuances of churned butter and toasted nuts.
Mitica® Marcona Almonds Delicately fried and salted, these Marcona almonds are a popular bar snack in Spain and have gained popularity here.
Ovelha Amanteigado This plush sheep’s milk torta from Portugal is buttery soft and has a delectable tanginess from the use of thistle rennet.
Paški Sir Our first Croatian cheese, this 1 year aged sheep’s milk cheese comes from the island of Pag, where sheep graze on salty grass.
