Checking in with Our Producers During the Pandemic

Despite the global pandemic, many of our producers are still working every day. Animals still need to be cared for, milked, and cheese must be made from that milk. Farmers and cheesemakers are not able to take a break. We have been checking in on all of our producers, and they have responded with videos, photos, and messages of hope and perseverance. We hope that their words bring you the same joy and positivity they have brought us. Just seeing their faces helps give us strength to get through this difficult time. We cannot wait until we can travel abroad again and see them in person. We will get through this together!

“Hello, we’re all well, we’re still here producing and producing safely, according to all the rules and regulations. Everything will be okay!”
A much-imitated cow’s milk cheese with black truffle and preserved in an ashed rind with spices, including nutmeg, cloves, coriander, cinnamon, licorice, anise, and fennel.
A one-year aged cow’s milk cheese with a crystalline paste and sweet, nutty flavor. It is reminiscent of a young Parmigiano Reggiano.

“We continue on. We don’t have a break. The sheep keep producing milk, thus, we keep on making our cheese from the Pyrenees, Roncal. Cheer up, because within 4 months this will fix itself and our cheese will be aged. Also, spring is when we make the best cheese. The grass is new and fresh and gives the milk the qualities we look for to make the best Roncal cheese.”
Made at the foot of the Pyrenees, this raw sheep’s milk cheese is aged 6 months. It develops a complex, piquant flavor with notes of lanolin and butterscotch.
As seen in the video above, Gran Kinara is an 80 lb wheel made in the style of Grana Padano and aged 1 year. It is one of the few aged cheeses made with thistle rennet, and is vegetarian-friendly.

A plush, dense soft-ripened goat’s milk cheese with a gorgeous, pungent creamline. It balances richness and acidity with a bright, lemony flavor.
