Julian & Team, Makers of PataCabra®
Aragón, Spain
“Good morning, friends. Our best wishes are with you. These are dark, difficult times that demand the best from us. Solidarity, commitment, and the well being of our families and society. There is no better medicine than happiness, caring, and protection by our community to overcome this situation. I’m sure that together we will get ahead of this. We’re sending strength, hope, and happiness. A big hug for the Forever Cheese family.”
Featured Cheese:
A washed-curd goat’s milk cheese that is fruity and gently pungent, with notes of crème fraiche and lemon. As it ages, the flavor becomes more robust, with a satisfying tangy kick in the finish.
Martina, Paška Sirana
Pag, Croatia
Featured Cheese:
A beloved cheese made exclusively on the tiny island of Pag with milk from the indigenous breed of sheep known as the Paška Ovca. Aged 1 year, it is full-flavored, pleasantly saline, and sheepy with notes of butterscotch.
Andrés, Paiarrop
Valencia, Spain
“I have brought a bit of work home, including creating a workshop with my wife and daughters. I’ve sent some photos. In addition to my computer, I bought home a small press so the family now knows what Dad does while at work and I’m not just on the telephone all the time. They wanted to know how to make a fig cake and some of the other things we’ve always made. And now, after making them, they say, “How could it be? This is amazing, it’s very hands on. With figs and almonds, you are putting together a cake – for example, like this one, similar to what we’ve been making at home. My daughter asked me, “how much does this cost?” With so much work and effort going into it, I told her, around 10 Euros, and she said “that is cheap.” Because she worked hard making them and she now thinks they are worth a lot. And this is the spirit that we must have to teach others how much they’re worth. But in this case, we send a message: Chin up! We can beat this virus. Let’s do it!
Featured Product from Paiarrop:
An artisanal cake made with just Pajarero figs and Marcona almonds. Like Andrés and his daughters showed in the video, they are painstakingly made by hand.
Quesos Corcuera
Castilla La Mancha, Spain
Featured Products from Corcuera:
The texture and appearance of this cheese are similar to Manchego, but it is made with a mix of 3 milks: cow, sheep, and goat. Aged 100 days, the flavor is perfectly balanced and approachable.
Raw Manchego El Trigal® 8 Months
