Torta del Casar DOP
A signature Spanish cheese, Torta del Casar is named for the province of Cáceres in the region of Extremadura, where the cheese originated. This unique style of cheese can only be made with raw sheep’s milk and thistle rennet, which imparts the paste with its unmistakable sour tang. Quesos del Casar is only one of 6 producers in the region making the DOP cheese. In operation for over 25 years, they have been dedicated to preserving the integrity of traditional, local cheeses that were once little-known outside of the region. These straw-colored mini tortas have a plush texture that will soften further with age, and a characteristic slight sour tang that mingles with hints of grass and lanolin. These flavors become more intense as the cheese ripens.
