Bruno Gritti of Quattro Portoni S.p.a, was the star of the Meet the Cheesemaker gathering organized by Importer Forever Cheese at My Moon Restaurant in Brooklyn, on the eve of July 25, 2015.
Various retailers and distributors gathered to meet Bruno and his family and learn more about their sustainable farm and how they make such delicious aged buffalo milk cheeses. Bruno unveiled his new and Silver Medal winner from France beer affinaged cheese, Surfin’ Blu. The cheese will be available to taste at the upcoming ACS Conference in Rhode Island July 30 and 31st at Forever Cheese’s networking salon.
Attendees were treated to inventive hors d’oeuvres such as Creamy Rice with Wild Mushrooms and Blu di Bufala, Arancino filled with liquid Quadrello di Bufala & Mini Croque Monsieur with Caciocavallo di Bufala, all prepared by Chef Mikel Trevino de Luis.
Bruno & Alfio Gritti are breeders of Mediterranean buffalo and they have a sustainable farm and cheese dairy in Cologno al Serio, province of Bergamo in Lombardy Italy. They have been represented by Forever Cheese as the sole importer for more than 5 years now.
