Michele’s persistence paid off in the discovery of another goat milk gem in the mountains of Piemonte. Made with 100% goat’s milk, the roughly 16 pound wheel has a ruddy grey patterned rind. The paste, aged for 45 days, has a great density and is creamy and semi-firm. Its assertive goaty flavor is tempered by sweet and nutty notes, making for a remarkable cheese. Preorder only.
