Taleggio Bergamasco Lombardia, Italy Look at this beaut of a rind! This Taleggio from Sergio Arrigoni is unlike those that are washed on a regular basis and develop a sticky orange-pink rind. Instead, the rind is left to mature naturally, only turned over and brushed as needed, which is typical of Bergamo. It has a drier, craggier rind and a lush, earthy paste with hints of grass, herbs, and yeast. 2/4#
BirbaBlu Piemonte, Italy This beer-soaked blue comes from the cheesemakers at Caseificio Pier Luigi Rosso, who make another fantastic beer-soaked cheese, Margot, as well as the classic Castelrosso. This cow’s milk cheese is aged for 60 days, soaked in a mixture of beer and malt, developing a sweetness with a hard hitting beer flavor that balances the blue cheese’s slight spice. 2/5#
Cebreiro DOP Santo André Galicia, Spain We love the unique shape and flavor of this DOP cow’s milk cheese from Galicia. We will have both a fresh and 45 day aged version. The cheese has a light, thin rind with a creamy, somewhat granular texture. The flavor is milky with a slight acidic tang, which becomes more pronounced as it ages. A standout! Fresh: 8/500g, Aged: 2/2kg
Kakis (Persimmons) Valencia, Spain Add some color to your winter! These sliced dried persimmons look lovely paired with a wide array of cheeses on a cheese board. Or enjoy the soft, honeyed flavor of kakis on their own as a healthy snack. 10/2.4oz
Truffle Marconas Valencia, Spain How to make fried Marcona almonds even more luxurious? Add black truffle! These are *almost* over the top but they’re so delicious that we don’t care. 1/5kg

Esporão Olive Oils Alentejo, Portugal This year, João Pelágio will be joining us in our booth with the best of Esporão. We carry their Extra Virgin Olive Oil, Organic Extra Virgin Olive Oil, Selecҫão Extra Virgin Olive Oil, and Red Wine Vinegar. Master olive oil maker Ana oversees varietals like Cobranҫosa, Arbequina, and Cordovil in Esporão’s centuries-old olive groves, which grow alongside hectares of their own vineyards. Their oil is superb; and ranges from a workhorse everyday oil to an exceptional single varietal finishing oil, all of which deserve a spot in your pantry.
Esporão has taken a number of measures to become more sustainable and minimize their impact on the environment. They are now using their recently built, state of the art, 100% sustainable olive mill at their facilities in Alentejo. Additionally, the Arrifes grove which abuts the mill is certified organic.
