Alpkäse 2023 – Alp Parpan
When four farming families decided all at once not to spend the next summer on their Alp, their village stepped up. A state-of-the-art Alp dairy was built and a team of cheesemakers hired so that the farmers could keep the tradition alive using the most precious milk of the year. Johannes Nick’s wheels hit you with a surprising brightness and refreshing acidity. The paste is nice and brittle with tiny openings. It’s definitely not your standard Alp cheese.
