This mildly tart and creamy goat’s milk cheese is covered with copious amounts of rosemary. Though the flavor of the herb is evident from the first to the last bite, it complements rather than competes with the cheese. Murcia is known for its excellent quality goat’s milk and this cheese highlights it. Many rosemary cheeses have a bitter finish but this one does not.
