Calasparra Rice DOP
Calasparra Rice, recognized for centuries as the finest rice in Spain, is native to the region of Murcia. The town of Calasparra is a natural enclave where river water flows fresh and cold, irrigating the plentiful rice fields. The pure water and optimal climate produce a superb premium short grain rice with a very high starch content. The grain, which is round and hard, dries out considerably during its slow maturation. This allows it to absorb more liquid and flavor during cooking without losing its structure; the risk of overcooking is very low. Its cultivation was recognized in 1986 with a Protected Designation of Origin, a rare honor for rice. It's a premium grade of rice ideal for paella, risotto, or other rice dishes.
