Gran Cacio Etrusco
Aged 6 months, this sheep’s milk cheese comes from the producers of Genuine Fulvi® Pecorino Romano in the countryside of Rome. The sheep’s milk is personally selected from 4 to 5 farms near the cheese plant. To create this pecorino, each wheel is hand-salted with fine Sicilian salt and then placed on wooden shelves to age in a naturally controlled cave. During aging, it is rubbed with a mix of olive pomace and vinegar, which helps the cheese retain excellent moisture and develop a full savory flavor with nutty, fruity, and olive-y notes. Often, mold starts forming on the rind, sometimes of an orange variety. While excellent for grating, it can be enjoyed as a table cheese with salumi, Castelvetrano olives and Casa Forcello® Green Tomato Mostarda.
