Lou Blau
This cow’s milk blue cheese from Fiandino, the cheesemaker behind Lou Bergier and Frumage L'Ottavio, was inspired by the ancient tradition of transhumance, the seasonal movement of livestock between pastures. They take great care of their Bruna Alpina cows, playing music at a special frequency in order to calm them and increase milk production. Slate-blue molding runs throughout the stout, cylindrical wheel wrapped in foil. It is made using thistle flower as a coagulant, which is very rare for cow’s milk cheeses. This special blue is rich, velvety and well balanced. Full-bodied, earthy, mushroomy flavors are tempered by notes of sweet cream. Preorder only.
